How do escorts decide where they go?

I remember when I first observed that most escorts in my region seem to lead itinerant lifestyles.
Maybe it's for the joy of travel, maybe it just makes sense as a business to travel to the towns where you can corner the market or both.
So I wonder to myself, is there an established trail to follow that escorts learn from each other or if not, how exactly do you decide which town or city to visit next?
In my county, it seems like the same 6 settlements get nearly everyone but then you see someone is in a city that is a bit out of the way.
I have just been curious for a while and wondered if there was more to it than I knew.
